Parsec allows you to choose which GPU and monitor it streams from on the hosting machine. The ability to choose this is in the hosting settings of Parsec and can be changed while you're connected to the hosting machine.

If this doesn't work, you can try setting the primary display in Windows to the screen you'd like to use.
